4 cyl efi question

i don't race sunset but I will ask at this board because i know there are tons of efi guys running here.
i am thinking of building another car for next year. Building non-efi cars are simple from a wiring standpoint. rip everything out and no problem putting a wire to the coil, bolt on a carb and go.

how do people go from a car with a full dash, fusebox, computer, etc. to a stripped-down mini stock? do you have to use the fusebox and relays, origional ignition, etc. and all the harness. I look at all the wiring and think that i was careful when dismantleing, i could probably keep it running, but heaven forbid if something went wrong. where do you start?
Do you find out which wires are essential for the ecu and just rewire them as needed?  If i understand correctly, the ecu needs input from a few things like O2 sensor, temp sensor, mass airflow, crank sensor, etc to control spark/fuel. Do you just strip it down to the essentials (if you can figure out what they are?) or try to leave as much intact as possible?
Please help me out with how YOU do this so i can decide whether to try something like this. It looks overwhelming to me but lots are doing it so i would like to learn

i guess i haven't decided on the actual car yet, that's why i'm asking how it's done to see if there is a general way of doing this or if there are cars that are much easier than others. obviously lots of hondas are being raced efi so that seems the logical choice although i'd like to figure out how to make a 93+vw work. There was one at barrie or sunset in 08, but didn't see it this year. i looked at a cavalier and it appeared he left all the wiring, fuses, even the instrument panel in the car.

hogg if its a cavalier or sunfire dont cut a single wire i'm told...i was talking to the 09 at varney an he had a biatch of a time after they did...01 mark is building a new one and he told me the same...we just unplug everything and tie it up ourselves with the dodges...alittle more time but the  u can still plug in and check engine codes.lol

I know there is a way to wire a mustang to avoid the limiter as well...just not sure exactly how
